    I tried a new recipe last night, and it is definitely one that will go in my book of favorites.  (Thanks, Mom!)

    Honey Orange Chicken

    Serves: 8
    Yummy chicken, pasta dish that is a cinch to prepare.
    Ingredients
    • 1 pound boneless chicken breasts cut into 1/2″ strips
    • 3 Tbl. butter
    • 1 tsp. salt
    • 1/2 tsp. paprika
    • 1/4 tsp. pepper
    • 1 medium onion, sliced (I cut it in half from end to end and then cut it into slices)
    • 1 Tbl. cornstarch
    • 1/2 tsp. ground ginger
    • 1/4 tsp. ground nutmeg
    • 1 c. orange juice
    • 1/4 c. honey
    • 1/2 c. pitted ripe olives, halved
    • Hot cooked linguine
    Instructions
    1. In a large skillet, saute chicken in 2 Tbl. butter until chicken juices run clear.
    2. Sprinkle with salt, paprika, & papper.
    3. Remove and keep warm.
    4. In the same pan, saute the onion in remaining butter until tender.
    5. In a small bowl, combine the cornstarch, ginger, nutmeg, orange juice, & honey; gradually pour over onion.
    6. Bring to a boil; cook and stir for 2 min. or until thickened.
    7. Add olives and chicken.
    8. Simmer, uncovered for 5 min. or until chicken is heated through.
    9. Serve with linguine.
    Notes

    I used 4 frozen breasts from Costco, 1 lb. uncooked linguine, 1 can of olives, and I tripled the sauce (because I didn’t realize how much 1 lb. of linguine cooked up to be! 🙂 It could have used more chicken and olives, but it was still SUPER good! And made a lot of leftovers. In fact, I think I’ll go eat some for breakfast.
